8 Quick Breakfast Ideas

Weekday mornings around our house are always crazy and finding enough time to prepare a healthy, nutritious breakfast is difficult. I thought the following suggestions were some easy alternatives to the same old cold cereal routine:

• Pick up some muffins from your local bakery or bake them yourself. (Try the Great Smokey Honey Muffins recipe at Busy Moms Recipes). These can be quickly grabbed on the way out of the door.

• Make a bunch of waffles or pancakes on Sunday morning and freeze the leftovers. They can be quickly reheated in the toaster on busy mornings during the week.

• Make breakfast burritos using by wrapping up sliced turkey or ham, cheese, and scrambled eggs in whole wheat tortillas.

• Spruce up ordinary toast or English muffins by spreading cream cheese and raisins on top, or peanut butter and sliced bananas (or low-sugar jam).

• Mix together granola cereal, nuts (almonds, peanuts, cashews), dried fruits, and seeds (sunflower, pumpkin, etc.) and put into individual plastic baggies for a grab and go breakfast.

• Try to add some fresh fruit like a banana, apples, or oranges to your breakfast plan. Grapes that have already been washed and placed in individual baggies are also a great choice.

• Make a quick “parfait” by combining plain or vanilla yogurt and fresh fruit.

• Quickly make cheese toast by toasting two slices of bread, adding a couple of slices of your favorite cheese on top and popping it in the microwave to melt for 10-15 seconds. Sprinkle on some wheat germ and you’re good to go.
